Part two of American-Mexican dishes, this dish is simple and very flavorful. With the first bite my husband said WOW its got some Kick! He then proceeded to eat everything from his plate and practically licked it clean. So clearly I did something right with this dish. To top it off I used the left over tortilla pieces from the taco cups to make homemade chips. This dish is great when topped with some salsa, sour cream and green onions!
